Candied Squash

Ingredients

  • 1 Butternut Squash
  • 1 Acorn Squash
  • 2 Tbsp Olive Oil
  • 1 Tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 Cup Butter
  • 1 Cup Brown Sugar
  • 1 Tsp Cinnamon
  • 1/4 Tsp Nutmeg

Method-

Peel and remove the seeds from the squash. Cut into 1/2 inch cubes (or the best you can). Toss in the olive oil with salt and pepper. Spray a sheet pan and arrange in a single layer. Bake at 300 degrees for 45 minutes.

Melt the butter along with the brown sugar and spices. Place squash in a large bowl and toss gently with the butter mixture. Spray a 9×13 pan and pour in the squash. Bake at 300 degrees for 25 minutes. Squash should be tender and a little crispy on the outside.
