Sheet Pan Quesadillas

Ingredients

  • About 16 Large Flour Tortillas
  • Olive Oil
  • 1 Cup Chopped Peppers
  • 1 Cup Chopped Onions
  • 2-3 Cloves of Garlic, Minced
  • 1 15oz can Black Beans, Drained and Rinsed
  • 1 Pound Sliced Chicken Breast- Grilled
  • 1 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1 Tsp Cumin
  • 1/2 Tsp Smoked Paprika
  • 2 Cups Shredded Monterey Jack Cheese
  • 1/2 Cup Shredded Cheddar

Method-

Brush the inside of a sheet pan with olive oil. Arrange 8 tortillas so that they overlap in the pan.

In a large pan, sautee the onions, peppers and garlic with a little olive oil unitl just tender- About 5 Minutes.

Add in the beans, chicken and spices and cook for another 2 minutes. Spread out the mixture over the tortillas and top with cheese. Place and additional layer of tortillas over top and cold over the edges. Brush with olive oil and place an additional sheet pan over top with parchment paper in-between.

Bake at 400 Degrees for about 15 minutes. Remove the top pan and parchment and bake for another 5 minutes.

Cut and Serve!
