Zucchini Lasagna Cups

Ingredients

  • 3 Medium Zucchini
  • 1 24oz Jar of Marinara Sauce
  • About 2 Cups Shredded Mozzarella
  • About 1/2 Cup Shredded Parmesan
  • About 1/4 Cup Seasoned Bread Crumbs

Method-

Wash and dry the zucchini and spray 2 regular muffin pans with pan spray (24 cups). Slice the zucchini into about 1/4 inch rings. Place one slice on the bottom of each muffin cup. Place about 1 tsp of marinara over each slice and cover with mozzarella. Repeat the process so that there are three layers. Top with Parmesan and bread crumbs.

Bake at 375 for 25-30 minutes. Should be bubbly and melted. Set aside to cool for a about 5 minutes before removing from the pan and serving!
