Nick’s Picks: Crab Bisque
Ingredients
Souperbowl just got a whole lot tastier!
- 4-5 Ribs of Celery Diced Small
- 1/2 Onion Diced Small
- 3-4 Garlic Cloves Minced
- 1 Stick of Butter
- 1/2 Cup Flour
- 1 Cup White cooking wine
- 2 Quarts Vegetable Stock
- Salt and Pepper to taste
- 1 Tsp Old Bay Seasoning
- 1 Tsp File Powder
- 1 Pound fresh crabmeat (claw or lump)
- 1 Cup Heavy Cream
Method-
In a large pot, sauté the celery onions and garlic in the butter until the veggies are tender. Add flour and stir to combine, turn heat to low. After about a minute, add wine to deglaze. Continue to cook and stir often until liquid has dissipated. Add stock and seasonings. Bring to a simmer and cook for 20 minutes. Add crabmeat and cream. turn off the heat and serve! Makes 2 1/2 Quarts
