Ingredients

  • 4-6 Cod Loin Filets
  • About 6 slices white bread, crusts removed
  • 1 Tbsp Butter melted
  • 1/8 Tsp Black Pepper
  • 1/4 tsp Salt
  • 1/4 Tsp Garlic
  • 1/4 Tsp Ginger
  • Olive Oil

Method-

Place bread slices in a food processor and pulse until crumbs. Transfer to a bowl and add melted butter and seasonings. Toast breadcrumbs in an oven at 350 degrees until golden brown. Remove and crumble further if necessary. Pat the fish dry with paper towels. Heat a large skillet until hot. Brush cod with olive oil and coat with breadcrumbs. Sear fish on both sides for about 4 minutes on each side. Cook thoroughly and serve!
