Rosemary Chicken Kabobs

Kabobs

  • 1 Pound Fresh Chicken Breast
  • 1 Cup Whole Greek Yogurt
  • 2-3 Sprigs Fresh Rosemary
  • Juice of Half a Lemon
  • 1 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 2-3 Cloves of Garlic, Minced
  • 1 Red Pepper, Large Diced
  • 1 Medium Zucchini, Large Diced
  • 1/2 Yellow Onion, Large Diced

 

Tzatziki Sauce

  • 1 Medium Cucumber
  • 1 Cup Whole Greek Yogurt
  • 1 Tsp Fresh Chopped Mint
  • Juice from Half a Lemon
  • 2 Garlic Cloves, Minced
  • 1 1/2 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1 Tbsp Olive Oil

 

 

Method-

Slice the chicken width-ways and slice into long strips. Marinate the chicken in the yogurt, lemon, rosemary, salt, pepper and garlic for at least 4 hours but preferably overnight. Skewer the chicken with the veggies. If using bamboo skewers, soak them in water for half an hour first.

To make the Tzatziki Sauce, finely shred the cucumber and press out as much water as you can. Combine it with the yogurt, mint, lemon, garlic, salt, pepper and oil. Refrigerate until ready to use.

Grill the kabobs until chicken is fully cooked and veggies are starting to tenderize. Serve with the Tzatziki on bread or just by itself! makes about 8 Skewers

Serve with tortillas and enjoy!
