Pumpkin Chili

Ingredients

  • 1 Pound Ground Beef
  • 1/2 Yellow Onion, Diced
  • 2 Cloves Garlic, Minced
  • 1 14oz Can Fire Roasted Tomatoes
  • 1 15 oz Can Black Beans, Drained and Rinsed
  • 1 15 oz can Kidney Beans, Drained and Rinsed
  • 1 15 oz can Sweet Corn, Drained and Rinsed
  • 1 15 oz can Solid Pumpkin
  • 2 Cups Beef Stock
  • 1 Tsp Cumin
  • 1 Tsp Chili Powder
  • 1/2 Tsp Paprika
  • 1/4 Tsp Cinnamon
  • 1 4oz can Diced Green Chile or Jalapenos

Method-

In a large pot, brown the beef along with the onions and garlic. Drain well and place in a slow cooker. Add all remaining ingredients and stir to combine.

Cook on low for 8 hours or high for 4.

Serve with sour cream and cheddar cheese if desired.
