Meatloaf “Bombs”
Ingredients
- 1/2 Yellow Onion, Minced
- 2 Cloves of Garlic, Minced
- 1 1/2 Cups Butter, divided
- 1 Tsp Salt
- 1/4 tsp Black pepper
- 1 Pound Ground Beef
- 1 Egg
- 1 Packet Onion Soup Mix
- 1/2 Cup Bread Crumbs
- 1/4 Cup Kethcup
- 1 Tbsp Fresh Chopped Parsely
- 8oz Swiss Cheese, Cut into 16 Cubes
- 2 Packages of Biscuit Dough
- 2 Cloves of Garlic Minced
- 1/4 Cup Grated Parmesan
Method-
Melt 4 tablespoons of butter in a skillet and sautee the onions and first listed garlic with the salt and pepper until tender. Set aside
Combine the beef, egg, soup mix, bread crumbs, ketchup and parsley in a large bowl. Add the sauteed onions and garlic along with any leftover butter from the pan. Create 16 equal balls of meat. Wrap each cube of cheese in meat and place in a baking dish. Bake at 350 degrees for 15 minutes. Remove from the oven and cool. Drain any fat with a paper towel.
Wrap each meatball in a biscuit dough, creating large balls. Seal the dough as well as you can to prevent leakage. Melt the remaining butter and garlic and brush over each dough ball and sprinkle with Parmesan cheese. Bake at 350 degrees for another 15 minutes, until golden brown.
