Chicken Parm Meatloaf

Ingredients

  • 1 1/2 Pounds Ground Chicken
  • 1/2 Cup Breadcrumbs
  • 2 Eggs
  • 1/2 Cup Grated Parmesan Cheese
  • 2 Tbsp Italian Seasoning
  • 1/2 Tsp Salt
  • 1/2 Tsp Garlic Powder
  • 2 Cups Shredded Mozzarella, Divided
  • 2 Cups Panko Breadcrumbs
  • Marinara Sauce

Method-

Combine the chicken, breadcrumbs, parm, seasonings and egg in a large bowl and divide into 5 equal portions. Press each portion flat and place about 2 tbsp of mozzarella in each portion and fold the meat around the cheese, making mini loaves. Roll each loaf in panko breadcrumbs and bake at 325 degrees for about 45 minutes, or until full cooked. Top with marinara and any extra mozzarella. Serve and enjoy!
