Easy Beef Enchiladas

Ingredients

  • 1 Pound Ground Beef
  • 2 Tbsp Taco Seasoning
  • 1/2 Cup Refried Beans
  • 2 Tbsp Water
  • 1 Package 6 in Flour Tortillas, About 10 Tortillas
  • 1 Can Red Enchilada Sauce
  • 2 Cups Shredded Mild Cheddar Cheese

Method-

Brown the beef and seasoning and drain well. Heat the beans in the same pan and add a little water while smoothing them out. Add the meat back in and mix to incorporate. Roll the meat and beans in the tortillas.

Spray a 9×13 pan with pan spray and pour in about 1/4 cup of the enchilada sauce, covering the bottom very lightly. Line up the rolled tortillas and pour over the rest of the enchilada sauce. Top with cheese and bake at 350 degrees for 20 minutes.

Easy meal to double up and make enough for leftovers!
