Garlic Butter Rice

Ingredients

  • 1/2 Yellow Onion, Skin On, Sliced with-wise
  • 1 Head of Garlic, Sliced Width-wise
  • 1/4 Cup Olive Oil
  • 1 Tsp Salt
  • 1 Sprig Rosemary
  • 1 Sprig Thyme
  • 2 Cups Long Grain White Rice
  • 3 Cups Cold Water
  • 1 1/4 Cup Chicken Stock
  • 1 Stick Butter
  • 1 Tsp Salt
  • Smoked Paprika

Method-

Place the cut ends of the garlic head and onion down in a 9×9 baking dish. Pour in olive oil and add herbs and salt. Bake at 350 degrees for about an hour. Allow to cool. Remove the garlic cloves and dice the onion without the skin and place in a large pot (strain the oil and save if wanted for your own garlic oil!). Add in rice, water, chicken stock and butter. Cover with a lid and bring to a simmer, then reduce heat to below a simmer and cook until liquid has evaporated and rice is tender. Stir and add salt if needed and paprika.
