Mac and Cheese Meatloaf Casserole

Ingredients

  • 2 Pounds, 80/20 Ground Beef
  • 1 Sleeve or 30 Ritz Crackers, Crushed Fine
  • 1 Packet Onion Soup Mix
  • 2 Eggs
  • 1 Cup Ketchup
  • 1 Cup BBQ Sauce, Plus Extra for Decoration
  • 1 Pound Macaroni Noodles
  • 1 10.5 oz Can Cheddar Soup Condensed
  • 2 Cups Whole Milk
  • 1 Tsp Salt
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1/4 Tsp Black Pepper
  • 2 Cups Shredded Mozzarella
  • 2 Cups Shredded Cheddar Cheese

Method-

Combine ketchup and BBQ Sauce in a small bowl and set aside. In a large bowl, mix together the beef, soup mix, eggs, crackers and 1 cup of the BBQ/Ketchup mix. Spray a 9×13 baking pan and spread the meat mixture evenly into the pan. Spread the remaining BBQ/Ketchup mix over top and bake at 350 degrees for half and hour.

While the meatloaf is cooking. Boil the pasta for one minute less than the box instructions and drain. In a large bowl combine the cheddar soup, milk, seasonings and pasta. In a separate bowl, mix together the cheeses and then add half of the blended cheeses to the the macaroni mix.

Remove the meatloaf from the oven and drain any fat. Top with the macaroni and then the rest of the cheeses. Return to the oven and bake for another 20-30 minutes. Drizzle with additional bbq sauce and serve!
