Nick’s Picks: Aztec Chicken Chili
Ingredients
Kick off your big game festivities with this kickin’ chicken chili!
- 1 Green Pepper Diced
- 1 Onion Diced
- 2 Pounds Chicken breast Cubed
- Salt
- Oil
- 2 Plum Tomatoes Diced
- 1 28oz Can Whole Peeled Tomatoes
- 1 28oz Can Crushed Tomatoes
- 1 Tsp Mesquite Seasoning
- 3 Oz Chipotle Peppers Chopped
- 29 oz Can Black Beans Drained and Rinsed
- 16 oz bag Frozen Corn
- 1 Tsp Salt
Method-
In a large pot over medium heat, cook peppers onions and chicken with a little oil for about 10 minutes stirring often. Season with salt to taste. Add tomatoes chipotle peppers and mesquite.
Bring to a simmer and cook for 20 minutes. Add beans, corn and salt. Cook for another 10 minutes on low.
