Ingredients

Kick off your big game festivities with this kickin’ chicken chili!

  • 1 Green Pepper Diced
  • 1 Onion Diced
  • 2 Pounds Chicken breast Cubed
  • Salt
  • Oil
  • 2 Plum Tomatoes Diced
  • 1 28oz Can Whole Peeled Tomatoes
  • 1 28oz Can Crushed Tomatoes
  • 1 Tsp Mesquite Seasoning
  • 3 Oz Chipotle Peppers Chopped
  • 29 oz Can Black Beans Drained and Rinsed
  • 16 oz bag Frozen Corn
  • 1 Tsp Salt

Method-

In a large pot over medium heat, cook peppers onions and chicken with a little oil for about 10 minutes stirring often. Season with salt to taste. Add tomatoes chipotle peppers and mesquite.

Bring to a simmer and cook for 20 minutes. Add beans, corn and salt. Cook for another 10 minutes on low.
