Nick’s Picks: Bacon Broccoli Salad

Ingredients

  • About 1.5 Pounds Fresh Broccoli Crowns or 1 Pound Fresh Broccoli Florets
  • 1 Red Pepper, Diced
  • 1/2 Vidallia Onion, Diced
  • 1/2 Pound Bacon
  • 2 Cups Mayonnaise
  • 1 Cup Heavy Cream
  • 1 Tbsp Salt
  • 1 Tsp Black Pepper
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1 1/2 Cups Shredded Cheddar Cheese

Method:

Trim the broccoli, removing most of the stems and cutting into bite sized pieces. Cook the bacon until crispy and cut into pieces.  In a large bowl, mix together the broccoli, bacon, onions and peppers.

In a separate bowl, mix together the mayo, heavy cream and seasonings. Pour over the broccoli mixture and add in the cheese. Toss to coat and refrigerate the salad for 1 hour.

Serve and enjoy!
