Nick’s Picks: Blueberry Apple Walnut Salad
Ingredients
- 4 Ounces Baby Spinach
- 4 Ounces Baby Arugula
- 1/2 Cup Balsamic Vinegar
- 1/2 Cup Walnuts
- 1 Cup Blueberries
- 1-2 Granny Smith Apples Sliced
- 1/2 Cup Feta Cheese Crumbled
Method-
Place vinegar in a small pot and bring to a simmer. Simmer for about 10 minutes or until you can coat the back of a spoon. Be careful not to burn. Remove from heat and allow to cool. You should have a nice syrup consistency.
Arrange the other ingredients in bowls or plates. Drizzle with the vinegar syrup and serve!
