Nick’s Picks: Breakfast Lasagna

Ingredients

  • 16 Frozen Hash Brown Patties
  • 16 oz Frozen Sliced Peppers and Onions
  • 9.6 oz Bag Frozen Turkey Sausage Crumbles
  • 12 Eggs, Scrambled
  • 2 Cups Shredded Swiss Cheese
  • 1 Cup Shredded Cheddar Cheese

Method:

On a large cookie sheet, bake the hash browns until golden brown, set aside. In a large skillet, sauté the onions and peppers until tender with a little butter and salt and pepper. Remove the peppers and onions from the pan and scramble the eggs in the same pan.

Spray a 9×13 pan with cooking spray and line the bottom with the hash browns. Layer the eggs, peppers and onions and sausage over the hash browns. Top with half of the cheese. Place another layer of hash browns on top and repeat with the rest of the toppings.

Bake at 350 for 20 minutes or until cheese is melted and bubbly.
