Nick’s Picks: Cajun Shrimp Sausage and Veggie Pocket
Ingredients
- 1 Pound Peeled Raw Shrimp
- 1 Pound Andouille or Smoked Sausage, Sliced
- Baby Potatoes
- 2-3 Zucchini Sliced
- Fresh Lemon Juice
- 1-2 tbsp Cajun Seasoning
- 1/2 Tsp Cayenne (Optional)
Method:
Make 4 squares of heavy-duty aluminum foil and spray each one. (12×12)
In a large bowl, combine shrimp, potatoes, sausage, zucchini, lemon juice and seasonings.
Place a handful on each square. Wrap and seal tightly.
Bake at 400 degrees for 30-40 minutes. Potatoes should be tender.
When opening the packet, be careful of the steam inside
