A delicious chili with a little kick!
Ingredients:
1 1/2 Pounds Chicken Breast
1 Large Green pepper Diced
1 Medium Yellow Onion Diced
1 Jalapeno, Seeded and Minced
2 Cups Chopped Tomatillos
2 Smashed Garlic Cloves
6 Cups Light Chicken Broth
1 Tsp Salt
1/4 Tsp Black Pepper
1/4 Tsp Cumin
1/4 Tsp Chili Powder
2 Tbsp Minced Fresh Cilantro
2 Tbsp Sour Cream
Method:
Boil the chicken breasts for about 20 minutes. Drain and dice. Combine the chicken, vegetables and broth in a large pot. Bring to a simmer, add the seasonings and cook for about an hour. Peppers should be cooked and chicken should be tender.
Remove from the heat and let rest for about 10 minutes. Add sour cream and cilantro and stir.
