Nick’s Picks: Coffee Cake Sublime
Ingredients
Streusel Topping-
- 1/2 Cup Rolled Oats
- 1/3 Cup Sugar
- 3 Tablespoon Melted Butter
- 1/2 Teaspoon Cinnamon
Coffee Cake-
- 1 Cup Sugar
- 1/2 Cup Butter Softened
- 1/2 Teaspoon Vanilla
- 4 Egg Whites
- 1 1/2 Cups Flour
- 3/4 Cup Rolled Oats
- 1 Tbsp Baking Powder
- 1/2 Teaspoon Baking Soda
- 3/4 Cup Sour Cream
- 1 Cup Raspberries
Method-
Heat oven to 350 Degrees. Combine ingredients for the topping and set aside.
Cream butter sugar and vanilla together with a beater until smooth. Add in egg whites and beat for about a minute. Add the flour, oats, baking soda and powder. Combine. Add in sour cream.
Fold in raspberries.
Spray a 13×9 inch pan. Spread coffee cake mixture in pan and sprinkle topping. Bake for 45-50 minutes or until a toothpick comes out clean!
