Ingredients:
Streusel Topping
1/2 Cup Rolled Oats
1/3 Cup Sugar
3 Tablespoon Melted Butter
1/2 Teaspoon Cinnamon
Coffee Cake
1 Cup Sugar
1/2 Cup Butter Softened
1/2 Teaspoon Vanilla
4 Egg Whites
1 1/2 Cups Flour
3/4 Cup Rolled Oats
1 Tbsp Baking Powder
1/2 Teaspoon Baking Soda
3/4 Cup Sour Cream
1 Cup Raspberries
Method:
Heat oven to 350 Degrees. Combine ingredients for the topping and set aside.
Cream butter sugar and vanilla together with a beater until smooth. Add in egg whites and beat for about a minute. Add the flour, oats, baking soda and powder. Combine. Add in sour cream.
Fold in raspberries.
Spray a 13×9 inch pan. Spread coffee cake mixture in pan and sprinkle topping.
Bake for 45-50 minutes or until a toothpick comes out clean!
