Nick's Picks: Crab Bisque

Souperbowl just got a whole lot tastier!

Nick's Picks: Crab BisqueIngredients:

4-5 Ribs of Celery Diced Small
1/2 Onion Diced Small
3-4 Garlic Cloves Minced
1 Stick of Butter
1/2 Cup Flour
1 Cup White cooking wine
2 Quarts Vegetable Stock
Salt and Pepper to taste
1 Tsp Old Bay Seasoning
1 Tsp File Powder
1 Pound fresh crabmeat (claw or lump)
1 Cup Heavy Cream

Method:

In a large pot, sautee the celery onions and garlic in the butter until the veggies are tender. Add flour and stir to combine, turn heat to low. After about a minute, add wine to deglaze. Continue to cook and stir often until liquid has dissipated. Add stock and seasonings. Bring to a simmer and cook for 20 minutes . Add crabmeat and cream. turn off the heat and serve! Makes 2 1/2 Quarts
