A creamy soup with all the classic tastes of Fall!
1/2 Yellow Onion Diced
1 Tbsp Butter
1/4 Tsp Salt
4 Cups Pumpkin Puree or Solid
1 cup Water or Vegetable Stock
3 Cups Half and Half, Cream or Milk
1/2 tsp Salt
1/4 Tsp Black Pepper
1/2 Tsp Chili Powder
1/2 Tsp Cinnamon
Method:
In a sauce pot, melt the butter and sautee the onions and salt
stirring often. Once onions are translucent, add the pumpkin and whisk
in the cream and water. Add seasonings and simmer for about 10
minutes.
