Nick’s Picks: Sweet Potato Bread
Ingredients
Tired of pumpkin flavored everything yet? This not-so-sweet bread might just do the trick!
The Bread-
- 2 Cups Flour
- 1 Tsp Baking Soda
- 1 Stick Butter Melted
- 1/2 Cup Packed Brown Sugar
- 1/2 Cup Sour Cream
- 2 Eggs
- Pinch of Salt
- 1 cup mashed sweet potatoes
- 1 tsp Vanilla
- 1/2 Cup Brown Sugar
- 1 Tsp Cinnamon
- 1/4 Tsp Nutmeg
The Icing-
- 3/4 Cup Powdered Sugar
- 3 Tbsp Heavy Cream
- 1/2 tsp Vanilla
Method-
Mix together the flour and baking soda. In a separate bowl, combine the butter, eggs, sweet potatoes, sour cream, salt and 1/2 a cup of brown sugar. Add in the flour by thirds until smooth and combined. Pour into two loaf pans. Mix together, the other 1/2 cup brown sugar, cinnamon and nutmeg. Sprinkle the top of the bread with the sugar mixture. Bake the bread at 350 for 40-50 minutes or until an inserted toothpick comes out cleanly. Cool completely
Whisk together the powdered sugar, heavy cream and vanilla. Transfer to a piping bag or a Ziploc bag with a small corner cut off. Drizzle over the bread
