Nick’s Picks: Sweet Potato Waffle Sandwiches

Ingredients

This Recipe makes about 1 sandwich, so adjust accordingly!

  • 1 Medium Sweet Potato, Peeled
  • 3 Eggs
  • 1 Tsp Chili Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Black Pepper
  • 2 Cups Fresh Baby Spinach
  • Olive Oil
  • Extra Salt and Pepper
  • Swiss Cheese

Method-

Shred the sweet potato and place in a bowl. Add one egg, a little olive oil and seasonings. Mix well.

Heat a waffle iron and spray with pan spray. Preferably not a Belgian waffle maker as that style of iron has cavities that tend to be pretty deep. Press the mixture into the waffle iron and close the top. Cook on high for about 5 minutes. If the waffle is still a bit soggy, keep the waffle maker on, but keep the lid open.

Take the other two eggs and separate them, cook the egg whites. Sautee the spinach with a little oil and salt and pepper. Drain well.

Assemble sandwich and enjoy!
