Nick’s Picks: Sweet Potato Waffle Sandwiches

Ingredients

This Recipe makes about 1 sandwich, so adjust accordingly!

Ingredients:

  • 1 Medium Sweet Potato, Peeled
  • 3 Eggs
  • 1 Tsp Chili Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Black Pepper
  • 2 Cups Fresh Baby Spinach
  • Olive Oil
  • Extra Salt and Pepper
  • Swiss Cheese

Method:

Shred the sweet potato and place in a bowl. Add one egg, a little olive oil and seasonings. Mix well.

Heat a waffle iron and spray with pan spray. Preferably not a Belgian waffle maker as the cavities are pretty deep. Press the mixture into the waffle iron and close the top. Cook on high for about 5 minutes. If the waffle is still a bit soggy, keep the waffle maker on, but keep the lid open.

Take the other two eggs and separate them, cook the egg whites. Sautee the spinach with a little oil and salt and pepper. Drain well.

Assemble sandwich and enjoy!
