Spicy Pork Stew

Ingredients

  • 2 Pounds Cubed Pork, Large
  • Olive oil
  • 1 Tbsp Salt
  • 1/2 Tsp Cumin
  • 1/4 Tsp Black Pepper
  • 1/2 Tbsp Chili Powder
  • 1 Tsp Cayenne
  • 1/2 Tsp Paprika
  • 1 Tsp Garlic Powder
  • 3 Medium Carrots, Peeled and medium diced
  • 1 Large Onion, medium Diced
  • 4 Cloves of Garlic, Minced
  • 1 Pound Hot Italian Sausage Links
  • 1 Tbsp Tomato Paste
  • 1 14oz Can Crushed Tomatoes
  • 3 Large Potatoes, Peeled and Diced
  • 4 Cups Chicken Stock
  • Salt and pepper to taste
  • 1/2 Tsp Smoked Paprika
  • 1 Can Great Northern Beans, Drained and Rinsed

Method-

Combine all the first listed seasonings and coat the pork generously. Heat a couple tablespoons of olive oil in a large pot and sear the pork on all sides. Remove the pork and drain on a paper towel. In the same pot, cook the carrots, onions. Remove the sausage from its casing and add that in too. Cook for about 5 minutes or until the onions start to turn translucent. Add in tomato paste, crushed tomatoes, potatoes and chicken stock. Bring to a low simmer and add the pork back in along with smoked paprika and beans. Simmer for about two hours and check seasonings, add salt and pepper if you need to. Carrots and potatoes should be very tender and pork shoulder be falling apart.
