Texas Cowboy Stew
Ingredients
- 12 oz Thick Cut Bacon, Chopped
- 1 Large Yellow Onion, Diced, About 1 Cup
- 4 Cloves of Garlic, Minced
- 1 Bell Pepper, Seeded and Diced Small
- 1 Jalapeno (Optional), Seeded and Diced Small
- 1 Pound Ground Beef
- 4 Cups Beef Broth
- 1 Cup Water
- 3 Medium Peeled Russet Potatoes, Diced Medium
- 1 14oz Can Red Kidney Beans, Drained and Rinsed
- 1 14 oz Can Pinto Beans, Drained and Rinsed
- 1 14 oz Can Corn, Drained
- 1 Tsp Salt
- 1 Tbsp Cumin
- 1 Tbsp Chili Powder
- 1 Tbsp Smoked Paprika
- 1/2 Tsp Black Pepper
- 1 Pound Beef Kielbasa, Sliced into 1/4 inch rounds
Method-
In a large pot, cook the bacon until crispy. Remove the bacon and drain on a paper towel. Remove all the bacon grease except about 1 tablespoon. Sautee the onions, garlic and peppers in the bacon grease for about 5 minutes. Add in the beef and cook until browned. Drain all grease. Add in the rest of the ingredients and bring to a low simmer. Cook until potatoes are tender, about 30-40 minutes.
