Texas Cowboy Stew

Ingredients

  • 12 oz Thick Cut Bacon, Chopped
  • 1 Large Yellow Onion, Diced, About 1 Cup
  • 4 Cloves of Garlic, Minced
  • 1 Bell Pepper, Seeded and Diced Small
  • 1 Jalapeno (Optional), Seeded and Diced Small
  • 1 Pound Ground Beef
  • 4 Cups Beef Broth
  • 1 Cup Water
  • 3 Medium Peeled Russet Potatoes, Diced Medium
  • 1 14oz Can Red Kidney Beans, Drained and Rinsed
  • 1 14 oz Can Pinto Beans, Drained and Rinsed
  • 1 14 oz Can Corn, Drained
  • 1 Tsp Salt
  • 1 Tbsp Cumin
  • 1 Tbsp Chili Powder
  • 1 Tbsp Smoked Paprika
  • 1/2 Tsp Black Pepper
  • 1 Pound Beef Kielbasa, Sliced into 1/4 inch rounds

Method-

In a large pot, cook the bacon until crispy. Remove the bacon and drain on a paper towel. Remove all the bacon grease except about 1 tablespoon. Sautee the onions, garlic and peppers in the bacon grease for about 5 minutes. Add in the beef and cook until browned. Drain all grease. Add in the rest of the ingredients and bring to a low simmer. Cook until potatoes are tender, about 30-40 minutes.
